A note of interest about spirits. Once a spirit is bottled, unlike wine, it does not change unless it is opened. Many people store their unopened bottles of brandy and whiskey with the false assumption that these things will continue to improve over the years. Some feel that if they store their favourite spirit for a number of years, it will soften and mellow and become something tremendous to consume.

Unfortunately, while the theory sounds nice, it isn't at all correct. While spirits aged in a barrel for fifty years will indeed change considerably in style, the same spirit aged in glass the same amount of time will look, smell, and taste exactly the same as it did the day it was bottled.
